Michelin shines spotlight on New Nordic cuisine

Michelin Nordic Countries guide released on April 15

The Michelin Group, tyre manufacturer and publisher of maps and guides, will for the first time print a guide for the Nordic countries, including Sweden, Finland, Norway and Denmark. The Michelin Nordic Countries guide will be released on April 15.

“Nordic gourmet dining features a wide variety of local produce and a cooking style that combines the best qualities and outstanding expertise of Swedish, Finnish, Norwegian and Danish cuisine,” Michael Ellis, the Michelin Guides’ international director said.

At the same time, Copenhagen, Oslo, Stockholm and Gothenburg have been awarded new Michelin stars for 2014. In the Danish capital, Claus Meyer’s Studio at The Standard, the restaurant Clou and Marchal at D’Angleterre Hotel all received a one-star rating.

Copenhagen’s restaurants now have a total of 17 stars for 15 restaurants, the highest number ever. Both noma and Geranium hold two stars.

Michelin stars have been awarded to three Swedish restaurants – two in Stockholm, Operakällaren and Oaxen, and one in Gothenburg, Bhoga. That takes Sweden’s total of Michelin-starred restaurants to 13. There are two restaurants with two stars each, namely Mathias Dahlgren Matsalen and Frantzén, both in Stockholm.

“There was a lot of happiness here, a lot of hugs. We haven’t really grasped it yet,” Magnus Ek, owner of Oaxen, told The Local.

In Oslo, two restaurants won their first Michelin stars, Ylajali and Fauna. They are recently opened New Nordic-style restaurants influenced by Copenhagen’s noma. This brings the number of Michelin-star restaurants in Oslo to five.
